First and foremost, this is not how my group does the shades, but as experienced groups go they generally don’t like to change the way they do things too much. Based on the problem you’ve described I can decipher the following.
No Tank, No Problem
They are pulling the 3 adds that can be Shackled into the hallway. They then focus fire them down using stuns and interrupts to easily kill them while crowd controlling the other 2 via Shackle or a Fear.
Shake that Healthy Butt
You’ll have to use your imagination a little bit with the following diagram.

x = The Shade
o = You, the Tank.
You want to position the Shade so that he’s still in the other room while sticking your ass out enough to get heals. If done properly, people standing even a few yards from you won’t get hit by the Shade’s Volley moves.
Food for thought: Sorcerous Shade’s have 3 different Volley moves, but all of them have a max range. So if you have melee stand back with the range and healers then no one should get hurt other than yourself while you burn down this mob. (keeping the adds shackled.)

But what about the third set (the ones up the ramp)? How do I LOS that shade if everyone’s in the room behind me?

I would assume that they want you to simply tank him at the top of the ramp so that they can fight at max range.

My biggest problem with these mobs at first…especially the first pack of them…was that all 4 in one cast do probably close to 15k damage…possible more for all I know. So without premptive heals you would see most tanks drop before the DPS even gets started. I decided at first to use an iceblock mage or a pally bubble to take the damage from the first casts with the CC and tanks quickly picking the adds up before the second cast. I later decided to try and use hunter pets for safety reasons…and using a CD kinda sucks. As far as the LOSing goes…I’m not really sure what to say about the third pack especially, The shades cast so quickly that if you don’t get them out of LOS before their first cast goes off the AOE will go through the floor, walls, whatever you’re working with. But the AOE really isn’t anything that your healer can’t heal through and it shouldn’t be something that is two-shotting anyone in your raid, either.
